I found the easiest recipe for a quick supper: Just brown a pound of lean ground beef. Pour off any fat. Add one can of Campbell's tomatoe soup undiluted), 1/2 cup water, 1/2 cup salsa, and six 6" flour tortillas cut into 1" pieces (about the size of a postage stamp). Stir all those into the ground beef. Heat to a boil. Reduce heat to low and cook for 5 minutes, stirring now and then. Serve topped with 1/2 cup shredded cheddar cheese or taco cheese. Makes about 4 servings. Takes about 20 minutes and it is ready to eat. It is called Beef Taco Skillet and I tore it out of a magazine.
For Creamy Mexican fiesta, stire in 1/2 cup sour cream with soup.
Ranchero style: use corn torillas instead of flour and shredded Mexican cheese blend instead of cheddar.
Also I used a cup of salsa instead of half a cup. I think a half tablespoon of our special blend of chili pepper stuff would give it more pizzaz too. :0)
