If you love enchiladas, you will love these homemade enchiladas. I always made them as the kids were growing up and we used to order special sauce from Texas for years until another company bought them out and quit making it. My daughter experimented until she found a great combination for the sauce and this is how they turn out. We put a meat/refried bean mixture inside the homemade tortilla, then taco sauce, and shredded cheese. I love mine with lots of chopped onion. YUM! Doesn't it just make you hungry to look at them?
