Hot Dish
I made a hot dish for supper last night. It was one I hadn't made for a long time. It sure tasted good and there is enough for another meal. I want to make chicken breasts tonight over celery soup flavored rice. I haven't made that either for years. Digging out old recipes and trying to make something different for a change from the regular old meat, potatoes and vegetable. We always have peaches for dessert or sometimes pears or fruit cocktail.

Steam Tray
I think when I go shopping for groceries, I am going to get the ingredients for what my brother calls a "Steam Tray". You take at least a 9 x 13 pan and cut up potatoes in it. Then you can add some cutup carrots, sliced cabbage, mushrooms if you like them, Kielbasa sausage cut up in bite size pieces and sweet onions cut and quartered. Then add cauliflower and brocolli, cut up and pour over it all about a cup of hot chicken broth.
Cover all this with aluminum foil and put in the oven about 350 until all the vegetables are done. It makes a tasty dish that is very good as leftovers and it feeds several people at once or if there are just two of you, like us, we have it again for a supper or two, depending on how much we ate the first time. It smells so good. Salt and pepper it a little before pouring on the chicken broth and you have one big wonderful hot dish.
