Supper is in the Crockpot

I have a nice roast and onions cooking away in the crockpot. It smells so good. You can smell the aroma all through the house. I plan to make mashed potatoes tonight instead of cooking them in with the roast. That will be so good with great gravy. I also want to make lettuce salad with miniature marshmallows and sweetened Miracle Whip. It is good for a change from the various dressings we like.

Homemade German Rice Soup

We love homemade rice soup like my mother-in-law always used to make. You need to make a good batch of beef broth. Then I pressure cook some stew meat until tender the day before and make enough for two batches and freeze one batch of meat and some broth. Next you add a big potato diced up or two if you like lots of potato. I add a can of diced carrots drained once the potatoes have cooked in the beef broth till done. While that is cooking, I make about a cup and a half of minute rice and let it stand until the potatoes are done in the broth. Add the rice and the stew meat and its broth and bring to a boil. And it is ready to eat. Lasts us several days for lunches and sometimes a supper if we are in a hurry. I make the beef broth with beef buillion out of a jar added to hot water in a 3-4 quart pan. Add it to your taste. When it is ready and boiling add those potatoes, and follow the directions given above. Sometimes the next day the rice will soak up all the broth. You can always make a little more broth in a smaller pan and add to it. It is so good.

Steak and Potatoes

There is nothing like a good steak. Especially when you have mashed potatoes and wonderful gravy to go with it. Mix together a great salad and there you are. It is an easy supper, using the grill and whip up an easy dessert, like sliced peaches and you are all set. Fresh biscuits or muffins, butter and jelly finish up the meal. We will probably have an ice cream later on. Sound good?

Fresh Fried Potatoes

Is there anything better than fresh fried potatoes? Of course we use the best most healthy oil to fry them in and they are so good. We have them frequently with supper and they are so good too, eaten along with fresh green onions out of the garden. The neighbor brought us fresh radishes too. They are so much more crisp and delicious than those in the store.
